Sweet Corner Experience

    For LEAP 2k12 (Lasallian Enrichment Alternative Program), I chose Sweet Corner to be my class because it was about designing cupcakes! It was facilitated by the CATCH2T13 batch government and held at Gokongwei Hall Room 201.


I was with Riezl Payawal and Din Tianzon for this class.
Icing, Cream, and Powdered Sugar
Ingredients for Icing:
1. Powdered Sugar
2. Cream
3. Food Coloring
4. Vanilla Extract (optional)

How to do the Icing:
1.) Mix 2 tablespoons of Powdered sugar with 1 tablespoon of cream. This is already enough for one cupcake. Just add more cream and powdered sugar for more icing.
2.) Mix it well until the mixture becomes thick. You can test it by turning your bowl upside down, and if the mixture doesn't fall easily, then your icing has the right consistency. 
3.) Add food coloring for the desired color, then mix again.
4.) You may want to add a drop of vanilla for more flavor. 
5.) Spread it on top of your cupcake! Enjoy!

Cookie Monster and a flower!
    We were given two (2) cupcakes each. Riezl designed the cookie monster cupcake and the flower was more of a team effort. These two cupcakes won in the cupcake contest. I'm really proud of the flower cupcake because I was the one who placed the petals in that manner.

    We also had fail cupcakes. We didn't really have any good ideas on what to put in our cupcakes, so we just experimented. I was supposed to make a beach cupcake, but it wasn't good enough. Despite the fail cupcakes we did, I really enjoyed this class. I was being artistic while eating.

A Rice Dish: Arroz Valenciana


          Yesterday, we had pork adobo for dinner. There were so much left overs, so my mom thought of using it for our dinner today. She used the left over pork adobo for making the Arroz Valenciana. I know it's sounds so spanish-y, but it is actually a known filipino rice dish. It must be first made during the spanish era (explaining the name). It is sticky rice with turmeric powder with pork or chicken.

Here are the ingredients used for the dish:

  • 1/2 kilo of Sticky rice (malagkit)
  • 2 sachets of Raisins
  • your left over chicken/pork adobo
  • 1 pc. bell pepper
  • A small can of green peas
  • 1 tablespoon of turmeric powder (for the yellowish color)
Procedure:
1. Place all the ingredients in a pot or in the rice cooker (if you have one). 
2. The rule with the water to rice ratio is 1:1. Meaning, 1 cup of rice is equivalent to 1 cup of water. Since 1/2 kilo of Sticky rice is 3 1/2 cups, your water must also be 3 1/2 cups. 
3. Cook the sticky rice with the ingredients just like how you cook plain rice. 
4. Serve and enjoy!

Just some of my favorite Cooking Shows

        Remember these guys? They are from the Japanese TV cooking show, Iron Chef. I was still a kid when this show was aired in the Philippine televsion, I was still in elementary back then. I really don't know why I loved watching this. It's not just the colorful chefs I'm fond of. I was really amazed on how they cook really fast and under pressure. These guys are just really talented. (Takeshi Kaga's from Takeshi's Castle, jsyk)

Cake Boss
         Cake Boss is a reality-drama TV show that takes the viewers behind the scenes of Carlo's City Hall Bake Shop in New Jersey. The owner, Buddy Valastro manages orders by making in-demand grandiose cakes. If you want to know what I mean by "grandiose cakes", you should search their products on google or something. I like this show because of the chefs creativity. It's like they can make art sculptures with cakes! It's not your typical 3 layered cakes, because it can go as far as the customer's imagination. Buddy and his team are just culinary geniuses. 

        Whenever I watch these two shows, I just crave for whatever they are making. I recommend you try watching them whenever you can!

Sweet and Sour Fish Fillet ala FoodStein


    Before going home yesterday (02/02/2012), I stopped by Orange and Spices inside the EGI building (it's near Gokongwei Building, DLSU-Manila) to buy my favorite dish of theirs called Cream Dory Fillet. Everytime we went to eat there, I always order fish fillet because it was really soft and tender. You can taste the crunchiness and then the softness of the fillet. I know Cream Dory Fillet sounds so classy, but it only costs 90 pesos. You can buy a meal less than a hundred pesos with your stomach already satisfied. 

    For my first experiment, I thought of buying Cream dory fillet from Orange & Spices and then turning it to Sweet and Sour fish fillet. So here are the ingredients I used for the dish:  


Ingredients
1. Cream dory fillet from Orange and Spices
2. A small can of Pineapple chunks*
3. 2 pieces of Bell pepper*
4. A sachet of Sweet and sour sauce *
5. Chopped onions

*These ingredients can be bought in your local grocery stores, for less than 25 pesos.

Procedure: 

1. Put cooking oil in the pre-heated pan. About 2 Tablespoons of cooking oil will do. 
2. If the oil is heated, sauté the onions, the pineapple, and the bell pepper simultaneously. Let it simmer for a while.
3. Next is to put the fillet. 
4. After the fillet, put the sweet and sour sauce. If the sauce starts to stick to the pan, begin putting water in small amounts. 
5. Put a pinch of salt and a spoonful of sugar. (Depends on how would you like it to taste) 
6. After 3 minutes, the dish is now ready to be served.

With just 5 main ingredients and 6 easy steps, you can make a restaurant-like dish in your homes with Orange and Spices Cream Dory Fillet.

Welcome to FoodStein


What is FoodStein?


FoodStein is a very unique blog that aims to inform people about of course, food. Unlike other food blogs that just review dishes, I'll be posting blog entries that educate the readers on how to make typical fast food meals to new home made dishes. Other than that, I will also be comparing food from different fast food shops and restaurants. This blog is for everyone who appreciates food.

Why FoodStein?

Food + Einstein = FoodStein

Basically, this blog is about food. The word einstein would represent new discoveries and experiments that I'll be blogging in this site. I'll be discovering and experimenting on how to re-cook certain fast food meals that can be transformed into yummy, home made viands instead of buying new dishes. This can help the readers especially if they are maintaining a budget.

Who is FoodStein?

This blog is not made by a chef nor a food expert. It is just made by a college student from De La Salle University - Manila for her experimental project for a certain course. Although not taking a culinary-related course, she still appreciates food anytime and anywhere.
